When the camera is mounted to a tripod, you can also use the X.Fn button to switch AF Mode during movie recording, and indeed this is what X.Fn is best used for. Pressing the button once will switch the focus motor off, while pressing it again will switch on again. This does have the same drawback as the AF Mode dial in that you'll have to physically re-focus the lens at the end of a movie recording, but it does have the advantage that you don't have to worry about the camera shaking, as it won't have any power applied to its autofocus drive mechanism.
How to do this depends on the camera, as the autofocus switch physically rotates, and the way that the AF Mode dial is cued during movie recording. If using the camera lens, this would involve removing the lens from the camera body, then rotating the lens focus switch position. If you have the camera on a tripod, you can disable autofocus using the camera body's right-hand AF Mode dial, which rotates 90 degrees between the AF and AV Mode positions. If you have the camera on a tripod, the AF Mode dial can't be relied upon to lock in autofocus, and you'll have to actually re-focus the lens by rotating it yourself, or use the other AF mode dial to lock the focusing process in place. This may be more hassle than it's worth, unless you have a need to manually focus during movie recording.
If you don't want to use bracketing, or simply want to disable it, the option is also available. The benefit of bracketing is that it allows you to rapidly select between a range of exposures, and it can also be useful for achieving the best results from high-ISO sensitivity settings, allowing you to shoot at higher shutter speeds without reducing image quality too much.
The Exposure Look can be set as either a single setting, or can be assigned a key and/or set of values. If you don't want to be bothered with any of that, you can also leave it set to 'Default,' in which case the camera simply selects a default value for the settings that you choose. This can be a particularly useful option when you're shooting in manual exposure mode, where the camera will choose a default shutter speed of 1/125 sec, for example. It should be noted, though, that while the camera can be set to default settings (so you can simply press the shutter button), it's not possible to set a scene default for all three exposure modes at once.
